'Tis the season! Our Holiday Order Menu has some delicious baked goods, Christmas cookies, sides & fresh baked bread for you to take home to your family & share with friends! One of our most popular seasonal sourdoughs is the Cranberry Walnut Sourdough that we feature in the bakery during this time of year. It is our classic Country Sourdough with the addition of just a little bit of rye for hearty flavor, dried & sweetened cranberries & crunchy walnut pieces.
So what can you make with the Cranberry Walnut Rye? Obviously, toasted with salted sweet cream butter & jam is an obvious & delicious option. But what else? This type of bread makes great sandwiches with holiday leftovers! Leftover turkey or ham layered with cheese, sliced apples, honey mustard & mayo will make a great quick & easy snack!
We decided to mix up a creamy & delicious turkey salad recipe to go with this bread! We then added some homemade cranberry orange jam as a sweet contrast to the savory turkey & wowwweeeee.....this stuff is delicious! You could mix up enough of this Turkey Salad to last you a couple of days. And feel free to sub the Turkey for Chicken - it is just as good!
Turkey Salad Sandwich with Orange Cranberry Sauce on Cranberry Walnut Rye
Turkey Salad Recipe
4 1/2 cups cooked turkey
3/4 cup chopped green apple
1/2 cup chopped pecans
1/4 cup dried cranberries
3/4 cup mayonnaise
2 T dijon style mustard
1/2 t pepper
1 t salt
Cranberry Orange Sauce
4 cups fresh or frozen cranberries
2 large Navel oranges squeezed & peeled
3 cups granulated sugar
1 1/2 cups water
For the Turkey Salad: shred the cooked turkey & mix all of the ingredients together in a large bowl until thoroughly combined.
For the Cranberry Orange Sauce: Peel the oranges & squeeze the juice into a large saucepan. Add the fresh or frozen cranberries, sugar & water to the pan along with the reserved orange peels & simmer until reduced to a thick sauce. Stir frequently to reduce burning the sauce. The process should take 10-15 minutes. Set aside, cover & refrigerate until cool.
To assemble the sandwich: toast the slices of bread if desired & layer with a leaf of bib lettuce, a generous scoop of Turkey Salad & a schmear of Cranberry Orange Sauce. Then.....enjoy! Easy as that!
This Sandwich is perfect for the holidays because it is so easy to assemble & make & the ingredients are those that you probably already have on hand. Even if you leave out the Cranberry Orange Spread, the Turkey Salad is delicious all on its own!

This cool, crisp weather that has fallen over the QC area as of late evokes feelings of comfort, warmth & nostalgia. Typically, the flavors that accompany these cooler temps consist of warm spices such as cinnamon, nutmeg, turmeric, cayenne & paprika as well as any types of dry herbs that will last through the cold, winter months. Pumpkin anything & everything is also a given - especially seeing the popularity of the Pumpkin Spice Latte.
Here at Baked, we try our best to incorporate seasonal flavors & in season fruits & vegetables into our baked goods, menus, chef features & events. Our cocktail menu is no exception. Now that our new, Fall cocktail menu has been jiving for a few weeks there has been a several stand out all stars. The Basic White Witch - a pumpkin spice cocktail definitely being one of them! If we had a dollar for every time someone asked us for a recipe...let's just say we would have a lot of dollars.
This is a great recipe to serve warm for a yummy spiked White Hot Cocoa style cocktail! It would be great to enjoy next to a bonfire or while huddled up on the couch on a chilly fall evening. You all have asked & we have delivered! Here it is folks!
Basic White Witch Cocktail
1oz Vanilla Vodka
Top with Pumpkin Spice Creamer (you can purchase this or make your own. Add 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, 1/4 tsp allspice to half & half)
1/4 Tablespoon Pumpkin Puree
Serve warm or cold & top with whipped cream & your choice of roasted pumpkin seeds, caramel drizzle, a dusting of cinnamon or white chocolate shavings.

These pretzels topped with our in house made honey mustard dipping sauce (in which jars will now be for sale at our restaurant for $6.00) and combined with a brew, makes for a Bavarian classic and a simple but great way to get your own oktoberfest on. The recipe for these pretzels is as follows:
